seeds and such for finches and parrots

If you feed a finch or parrot seed mix in small enough amounts, do you specifically have to use mixes labeled as bird treats or just regular seed mixes marketed as their main food is fine too? Getting the bigger bags would save money but I wonder if they will go bad before we use up all of them. People can eat those too, if the only ingredients are seeds and we cook or sprout it first, right?

Can one just buy freeze dried veggie and fruit mixes, often labeled for parrots? It's too save time, also many of them have ingredients that would be hard for us to buy or hard for me to grow. I read that they keep 97% of the nutrients but I can just add in at least 3% more to make up for the difference and it can be eaten in several ways too.
